INGREDIENTS:
Pastry Base
150g self raising flour
30g sugar
1/2 t eastpoon salt
65g butter
enough icy cold water to make soft dough about 30-40g

Filling:
600g crushed pineapple in its juice
5 egg yolks
pinch salt
30g vanilla custard powder dissolved in a little water
75g sugar
50g butter

Meringue topping:
5 egg whites
40g caster sugar
pinch of cream of tartar

Easy Wonton Soup – Cook n’ Share

Wonton soup is a type of dumpling that originated in China. It has now made its way into kitchens and restaurants around the world with several variations. This recipe is our variation of wonton soup.

There are a few pointers to making this recipe. First, we use square wonton wrappers, but you can use the wrapper of your choice. We just find the square ones are easiest.

For the filling, we use ground pork combined with ginger, salt, pepper, corn starch, and spring onions. You could also add some
carrots or whatever you wish.

The broth is a simple mixture of chicken stock, ginger, garlic, and bok choy leaves. You can add your variations to this, as well.

Sweet Potato Shepherd’s Pie – Easy Midweek Dinner

Sweet potato shepherd’s pie is simple and delicious. Due to the fact the the dish can be made up in about 45 minutes, it makes a great midweek meal. I often make it up for pot-luck dinners, as well.

There are a few variations to this simple recipe if you choose to make them.

To begin with, the base of sweet potatoes can be as thin or as thick as you wish. I find using four potatoes is just about perfect, but you can be the judge of that. I only add milk and butter to my sweet potato mash, but other recipes use brown sugar or maple syrup. These can be added if you’re so inclined.

We use frozen mixed vegetables in our mix as they are so simple and easy. You can, however, use fresh veggies if you have them on hand.

This recipe uses ketchup and Worcestershire sauce in addition to the other spices. These 2 ingredients can certainly be altered. For example, if you want it more savory, add more; alternatively, you can cut back on them or leave them out. Feel free to add your spices too.

Luscious Lemon Drizzle Cake – Cook n’ Share

This lemon drizzle cake is truly luscious, moist, and absolutely delicious. It’s one of my standby recipes, and I make it up at least three time a year when guests come over. As with all our recipes, you can vary many of the ingredients and amounts according to your liking. For example, if you want the cake to have more of a lemon kick, you can add more zest. If you want extra moisture, add a bit of milk.

The drizzle is a bit tricky and needs to be adjusted according to your taste. I find a cup of sugar combined with the juices from two lemons perfect. All tastes vary, so feel free to change the mixture according to what you like. For example, if you want it more on the sour side, add more lemon or less sugar. If you want it sweeter, add less lemon and more sugar.

Be sure to poke many holes in the cake as you want the drizzle to penetrate deeply into the cake.
