Where Can Your Family Find Good Food? Burger Weekend – Episode 1

The fast food world is all around us. Burgers, hot dogs, fries, the list is never ending. We can ask the questions: What are the nutritional values of these foods, what’s really in them, and how do they compare and taste? In this video, we have done some of the research for you.

We’ve started a new series called: “Where can your family find good food?” In our first video we compare the McDonald’s cheeseburger and the A & W Buddy burger with cheese. We give you the nutritional values, tell you what’s in the burgers, and pass on our opinion.

One Pan Chicken with Broccoli in 30 Minutes

One pan chicken with broccoli can be made up in literally 30 minutes. This makes it a great midweek meal. If your schedule is a busy one, and your family likes Asian food, this is the recipe for your. As with any recipe, there are a few variations. First, any cut of chicken can be used. I like boneless, skinless breasts because they are so healthy and easy to work with. One pointer is to make sure your chicken is at room temperature to ensure it cooks evenly.

In terms of the rest of the ingredients, you can vary them according to your liking. For example, if you’re a garlic lover, use more; on the other hand, if you’re not, use less. If you find the garlic and ginger are a bit too raw, you can toss them in with the broccoli to get a bit more of a cook on them.

Crispy and Spicy Tofu in 20 Minutes

Crispy and spicy tofu makes an excellent appetizer. Not to mention, it’s healthy, easy and delicious. I make it up during the week for my meatless Wednesday, but it’s good anytime of the week. Our crispy and spicy tofu is especially suited for parties or and get together.

As with all of our recipes, you can make substitutions or omissions according to your taste. For example, if you find the jalapenos too much or too hot, simply leave them our or sub them for bell peppers. If you like a bit more garlic, go ahead and add it. If you want extra spices or ingredients, they would be fine, as well.

Kanom Jeen Namya Recipe (Rice Noodles w/ Fish Curry) ขนมจีนนำ้ยา- Hot Thai Kitchen!

Kanom Jeen is what I like to call the Thai spaghetti because in Thailand, we serve these tender rice noodles with various types of sauces, and you can even go to restaurants where they specialize in kanom jeen and you can choose from a spread of different sauces!

“Namya” is arguably the most popular of all kanom jeen sauces, and this version is from the south of Thailand, where I grew up. My family used to frequent this street-side restaurant that sells nothing but kanom jeen namya, and it was the most unglamorous of places (no walls, just old wooden tables under a roof), but going there is one of my favourite food memories of all time! They also made it mild enough that even as a little kid, I was able to enjoy it (or maybe I was eating the kid’s version…I’m not really sure!).

This is not something you can easily find in Thai restaurants overseas, so definitely something you gotta make if you want to experience it! The key ingredient “grachai” is a bit hard to find, but you can buy it in brine in a glass jar at Asian grocery stores that carry a lot of Thai or Southeast Asian ingredients.

Thai Coconut Waffle Recipe ขนมรังผึ้ง – Hot Thai Kitchen!

Yes, we do have a version of the waffle in Thailand! We call them “kanom rung peung” or literally “bee hive snack”, and they are made with coconut milk, palm sugar, shredded coconut, and studded with sweet corn, but you can change the corn to taro, raisins, or anything else you’d like.

Though I often eat these for breakfast (I freeze them and just pop them in the toaster), in Thailand they are sold on the street and are eaten as snacks any time of day (kind of like a doughnut!), and because they are already sweet and delicious on their own, you don’t need any additional toppings!

Festive Fruit Salad with Pecans – Happy Holidays!!!

Festive fruit salad is a delicious combination of fruit and nuts. The pecans are what gives the dish such a unique taste and texture. It’s great served up over the Holiday season, but equally as good any time of the year. Due to its sweetness and richness the kids will enjoy it. The great thing is, fruit salad is relatively healthy.
There are a few pointers to making this delicious fruit salad. We use pecans because we like the flavor of them, but walnuts can be used too. Actually, a combination of both is nice. Other nuts of your choice could be a welcomed addition, as well.
In this recipe, the dish is chilled for at least two hours. It can be eaten directly after you make it, but it’s so nice chilled. This is what makes it an excellent recipe for the summer months too.
We use Cool Whip because it’s fast and easy, but regular whipped cream or all-purpose cream can be used. If you really want a creamy texture, make sure the fat content of the cream is above 30 percent.

Cranberry Cherry Cake – episode 320

Delicious Cranberry Cherry Cake Recipe:

3 sticks unsalted butter (24 oz)
2 cups sugar
4 egg whites
1/2 tbsp vanilla extract
3 cups flour
1/2 tsp baking soda
2 1/2 tsp baking powder
Pinch of salt
1 1/2 cups milk

Cranberry Cherry Filling:

12 oz dried cranberries (about 3 cups)
1 cup cherry filling
1 orange juiced
3/4 cup sugar

Cream Cheese Frosting:

1 stick unsalted butter
8 oz cream cheese
4 cups powdered sugar
2 tbsp whole milk

Bake cake in a preheated oven at 350 degrees for 25 minutes or until done

Crispy Chicken Cheese Purses Recipe ถุงทองไก่ชีส – Hot Thai Kitchen!

These crispy chicken cheese “purses” are the perfect appetizer for your next dinner party! Spring roll wrappers are easy to find and even easier to use, and they fry up to be shatteringly crispy and beautifully golden. The filling is tender chicken scented by citrusy coriander seeds, with a hidden surprise of creamy tangy cheese! If you don’t like goat cheese or cannot find it, you can substitute mozzarella, blue cheese or even cream cheese.

Serve these with your favourite hot sauce (mine is sriracha!) or for something less spicy try the sweet chili dipping sauce which is our go-to dipping sauce for anything fried!

20 Minute Creamy Tuna Spaghetti

Creamy tuna spaghetti is a dish I enjoy any time of the year. Not to mention, it’s one of my all-time favorites. Made with a simple combination of tuna, heavy cream, garlic, onions, and spaghetti, it’s simple yet incredibly delicious. This recipe makes it a great midweek meal because the entire dish can be whipped up in about 25 minutes. Watch the video, try it, and let us know what you think.
As with all our videos and recipes, we have a few pointers to making this incredible creamy tuna spaghetti. To begin with, if you’re somewhat diet conscious, half and half or table cream can be substituted for heavy cream. Each has about half the fat content, thus, containing half the calories. We use a few spices such as garlic and onions. You can alter the amounts per your liking, however. If you have any spices you think would go with the tuna spaghetti, go ahead, and use them. For example, jalapeno peppers might add a nice touch to the dish. The recipe is very similar to carbonara. In light of this, some bacon might go well with it.

Baked Stuffed Chicken Breasts

Baked stuffed chicken breasts is one of the simplest and nicest recipes I have encountered. I love it any time of the year especially during the Holidays. I find it makes a great alternative to traditional turkey or chicken with a similar outcome at a fraction of the cost. It’s so good, we make a habit of cooking the stuffed breasts up at least four times a year. They are a great dish for any dinner party too.
Remember, there are a few options to making these simply delightful stuffed chicken breasts. Firstly, we use butterfly breasts because they are so easy to work with. If you can find these or don’t want to use them, get a boneless, skinless chicken breast and make an incision in the middle. You’ll achieve the same outcome this way. We use just salt and pepper to season our chicken, but you can add additional spices such as garlic and onion powder, etc. if you are so inclined. In other words, spice per your taste.
For convince purposes, stovetop stuffing is used in the recipe. If you are adventurous or have a bit of extra time, you can make the stuffing from scratch. We have a great recipe for this.
In our oven, the stuffed breasts bake perfectly in 30 minutes at 350 degrees F. Oven do vary, however, so keep a close eye on them. You want them to the point where they are done, but you want them juicy too.
