Pineapple Chicken

Pineapple chicken is sensational. The great thing is, it’s made with a few simple ingredients that most people will have kicking around their kitchens. It only takes about half an hour to make, so it makes a great midweek meal. I always use boneless, skinless chicken breast as they are so easy to work with and healthy, but you can use whatever cut of chicken you like. As always you can alter the ingredients according to your liking. We like the red bell peppers because they add a nice color to the dish and they’re sweet, but you can use green or yellow peppers if you wish. You could even add a combination of all three. “Underwater Chicken” Recipe ไก่ใต้นำ้ – Hot Thai Kitchen!

This “underwater” cooking technique is going to blow your mind, both by the sheer brilliance of the science behind it, and also by how deliciously tender and flavourful the chicken becomes! After seeing how this works (it’s all explained in the video) you might think it’s a newly developed technique by smart science nerds, but this method has actually been used by rural Thais long before food science became trendy. And whoever was the first person to come up with this has my total respect.

Beyond being a cool trick, it is one of the simplest recipes I have, and the end product just blooms with the aroma of Thai herbs, and fall-off-the-bone tender chicken ends up in a sauce that is packed full of iconic Thai flavours. I cannot say enough about it…it’s just SO amazing in every way.

P.S. I believe this technique was originally used for cooking and tenderizing retired chickens that were involved in cockfights, and whose meat was very tough and chewy. It also works well as a way to control temperature of the pot when cooking over wood fire or coal which many people do in rural Thailand.

Pork Sizzle Plate cheekyricho Malaysian video recipe episode 1,114

On a recent trip to Malaysia we sampled dozens of Sizzle Plate. This one was our favourite, so we recreated it back home. This is our cheekyricho version of the Pork Sizzle Plate. This budget recipe serves 2 and is simple, healthy and delicious. Sizzle Plates are reasonably cheap to buy, last forever and are an interesting option for a dinner party. We hope you give it a try.
INGREDIENTS:
2 eggs
250g sliced raw pork pieces
1 onion
250g home made rich chicken stoic
vege salt & pepper to taste
small bunch of Asian Greens of your choice
100g cooked thick rice noodles
20g peanut oil
30g oyster sauce.

Chicken Fajitas

Chicken fajitas are incredibly easy to make and simply delightful. I’ve always been a fan of Mexican food. Beautifully seasoned with salt, pepper, chilli powder, garlic, and cumin and drizzled with olive oil, the taste of these fajitas is out of this wold. As always, you can alter the amount of the spices or even add extras for that matter. Serve them up with your favourite tortilla wrapper. I always use plain, but you can use whole wheat or whatever you like best. Don’t forget your favourite toppings too. Mackerel Lettuce Wrap “Miang Pla Too” เมี่ยงปลาทู – Hot Thai Kitchen!

“Miang” is our word for any kind of bite-sized wrap, usually wrapped in some type of leaf. Miang Pla Too is one of the easiest ones to make, and also my absolute favourite because it is light, fresh, full of herbs, and perfect for the summer! If you don’t like mackerel you can use other kinds of fish for the wrap, in Thailand we use other types of grilled white fish for miang as well. P.S. It is gluten-free!

Tres Leches Cake – 3 Milk Cake

Tres leches or 3 milk cake, in English, is unique and delightful. It’s actually similar to a basic sponge cake soaked in 3 types of milk: sweetened condensed, evaporated, and half and half. You can alter the half and half by using 2 % milk or, if your not too diet conscious, us table cream. Poutine pizza is an incredible fusion of a classic Canadian dish and pizza. It’s a simple combination of pizza dough covered with gravy, French fries, ground beef, and cheese curds. Of course, you can always add your favourite toppings to the pizza. A layer of pizza sauce, some bell peppers, onions, and other ingredients might be a welcomed addition depending on your taste. American Fried Rice ข้าวผัดอเมริกัน – Hot Thai Kitchen!

Since the 4th of July celebration is coming up, I thought it would be the appropriate time for me to post this “Thai” recipe! This fried rice, though named “American”, is a uniquely Thai experience. It contains ingredients that we associate with American food: ketchup, hot dogs, sunnyside up egg, and fried chicken drumsticks (possibly through the asoiciation with KFC).

In Thailand, this is one of the most popular dishes amongst kids because it is not spicy, has kid-friendly flavours, and it just looks like a lot of fun! (Which kid wouldn’t love octopus-shaped mini hot dogs, right?) It has been a long time since I had this dish, and I thought that with my adult palate, I wouldn’t like it as much now, but I was so surprised to find that I love it even more, and I’m sure you will too!

Summer Fruit Popsicles – 3 Ingredients

Summer fruit popsicles are easy and refreshing. They are actually really fun to make. They involve a few simple ingredients: milk, the fruit of your choice, and sugar. We use cantaloupe and watermelon, but it’s entirely your call. If you’re diet conscious, you can cut back a bit on the sugar and use water instead of milk. Garlicky Tomatoey Weeknight Pasta – Pai’s Kitchen!

I came up with this dish because I was craving some tomatoey pasta (which happens quite often!), but I didn’t have time for a slow-simmering pot of tomato sauce to be done, so I whipped out my wok and put this together, and it turned out absolutely delicious!

With just a few simple ingredients, it’s a handy recipe to have in your back pocket for when you’re tired and hungry from work and need to put satisfying food on the table quickly. I use roasted eggplant in this video but you certainly can change it up with other vegetables you like to roast. The sausage is totally optional so it can absolutely be vegetarian or vegan. Enjoy!
